Creamy turkey soup with fettuccine noodles, homemade broth, and savory stuffing for a comforting meal.
Ingredients:
  • 1 turkey carcass
  • 1 cup butter, cubed
  • 1 large onion, chopped
  • 2 stalks celery, diced
  • 2 large carrots, diced
  • 1 cup all-purpose flour
  • 2 cups half-and-half
  • 4 ounces fettuccine, broken into 2-inch pieces
  • 0.25 cup prepared stuffing, or more to taste
  • 2 teaspoons salt
  • 1 teaspoon chicken bouillon granules
  • 0.75 teaspoon ground black pepper
  • 1 pinch poultry seasoning, or to taste
Instructions:
  • In a large pot or Dutch oven, submerge the turkey carcass in water and bring to a boil. Simmer, covered, for 1 hour on medium heat. Then, remove the carcass and let it cool. Tear off the turkey meat from the bones, cut into bite-sized pieces, and discard the bones. Set aside 12 cups of the turkey broth in a large bowl for later use, and store any leftover broth for another recipe.
  • In a large pot over medium heat, melt butter. Add onion, celery, and carrots, and cook until tender, about 5 minutes. Sprinkle in flour and stir until smooth for another 5 minutes. Slowly pour in 4 cups of turkey broth, bring to a boil, and cook until thickened, about 2 minutes.
  • Add the 8 cups of turkey broth, turkey meat, half-and-half, fettuccine, stuffing, salt, bouillon, pepper, and poultry seasoning to the mixture. Simmer on medium-low heat, covered, until the noodles are tender, approximately 10 minutes.
