Creamy Alfredo-Turkey Skillet Dinner

Try this easy cheesy turkey pasta skillet - ready in 25 minutes!
Ingredients:
  • 2 cups uncooked whole wheat rotini pasta (6 oz)
  • 1 lb lean ground turkey
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 3 cups firmly packed fresh spinach leaves
  • 1 container (10 oz) refrigerated reduced-fat Alfredo pasta sauce
  • 1 can (14.5 oz) petite diced tomatoes, undrained
  • 1/4 cup shredded Parmesan cheese (1 oz)
Instructions:
  • Cook the pasta in a 2-quart saucepan according to package instructions, then drain. Avoid adding salt.
  • In a large nonstick skillet, sauté the turkey with Italian seasoning and salt over medium-high heat for 6 to 8 minutes, stirring occasionally, until the turkey is cooked through; then drain any excess liquid.
  • Combine spinach with turkey and cook over medium heat until spinach wilts. Add pasta sauce and tomatoes, cook until heated through, then mix in the pasta.
  • Sprinkle cheese on top and reduce heat to low. Cover and cook for about 5 minutes until the cheese is melted.
