Creamy Alfredo cheese tortellini with mushrooms for a comforting and easy meal.
Ingredients:
  • 1 tablespoon olive oil
  • 1 (20 ounce) package refrigerated cheese tortellini
  • 8 tablespoons butter, divided
  • 2 (8 ounce) packages sliced baby portobello mushrooms
  • 0.5 cup finely chopped onion
  • 2 cups half-and-half
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 1 pinch cayenne pepper
  • 0.75 cup grated Parmesan cheese
  • 0.5 teaspoon chopped fresh thyme, or to taste
Instructions:
  • In a large pot, fill it with water and add 1 tablespoon of oil. Bring it to a vigorous boil. Add the tortellini and cook until they rise to the surface and the filling is heated through, approximately 7 minutes. Drain and transfer the tortellini to a large bowl.
  • Melt 2 tablespoons of butter in a large saucepan over medium-high heat. Saute mushrooms, onion, and garlic until soft, about 5 minutes. Transfer the vegetable mixture to the bowl with the tortellini using a slotted spoon.
  • Strain the mushroom liquid, then melt the remaining butter in the saucepan over medium heat. Add half-and-half, salt, pepper, garlic powder, and cayenne. Cook until thick and bubbly, around 10 minutes, stirring occasionally. Gradually mix in Parmesan cheese until melted and sauce thickens.
  • Drizzle the sauce over the tortellini and mushroom blend, gently mix together. Present in bowls and top with aromatic fresh thyme.
