Quick and easy microwave fudge.
Ingredients:
  • 2 x 395g cans sweetened condensed milk
  • 360.00 gm firmly packed brown sugar
  • 250g butter, chopped
  • 108.90 gm liquid glucose
  • 83.75 gm golden syrup
  • 400g good-quality white cooking chocolate, chopped
Instructions:
  • Prepare a 16.5cm x 26cm slab pan by greasing it and lining it with baking paper, making sure to leave a 2cm overhang at both long ends.
  • Combine condensed milk, sugar, butter, glucose, and golden syrup in a 14-cup heatproof microwave-safe bowl. Microwave uncovered on MEDIUM-HIGH for 8 to 10 minutes, stirring every 2 minutes with a balloon whisk until mixture boils.
  • Microwave uncovered on MEDIUM-HIGH (70%) for 5 to 6 minutes, stirring every minute with a wooden spoon, until thick and golden.
  • Place the bowl on a board and allow it to stand for 2 minutes until the bubbles subside. Add the white chocolate and stir until completely melted and the mixture is smooth. Pour the hot fudge mixture into the prepared pan, ensuring the surface is smooth. Let it stand at room temperature for 3 hours, then refrigerate until firm. Finally, lift it onto a board and cut into squares.
