Creamy Chanterelle Mushroom Soup

Elevate your French dinner party with a luxurious chanterelle cream of mushroom soup.
Ingredients:
  • 8 ounces chanterelle mushrooms
  • 4 tablespoons butter
  • 2 cups diced shallot
  • salt and ground black pepper to taste
  • 1 drizzle olive oil
  • 4 cups chicken stock
  • 0.5 cup half-and-half
Instructions:
  • Clean the mushrooms by rinsing and drying them, then slice them in half. Check for any dirt or bugs and chop them accordingly.
  • In a deep, heavy-bottomed pot over medium heat, melt butter. Sauté shallots until translucent, for 3 to 5 minutes. Add mushroom pieces with a pinch of salt to release their juices. Season with pepper and drizzle with olive oil. Cook until mushrooms shrink and brown, around 5 minutes.
  • Pour flavorful chicken stock into a pot and bring it to a gentle boil. Simmer for 15 minutes, then allow it to cool slightly for 10 to 20 minutes.
  • Transfer the soup to a powerful blender. Secure the lid with a potholder and blend on high for 1 to 2 minutes until smooth. Pour in half-and-half and blend for another minute. Pour the mixture back into the pot, heat for 5 to 10 minutes until warm. Taste and season as needed.
