Sautéed chanterelle mushrooms in creamy sauce with shallots and herbs, perfect as a side or pasta topping.
Ingredients:
  • 3 shallots, minced
  • 3 cups fresh wild chanterelle mushrooms, cleaned and quartered
  • 1.5 teaspoons all-purpose flour
  • 0.5 teaspoon cold water, or as needed
  • 0.5 teaspoon salt
  • 0.5 teaspoon herbes de Provence, or to taste
  • fresh ground black pepper, to taste
Instructions:
  • In a pan over medium heat, melt butter and sauté shallots until soft and translucent for about 5 minutes. Toss in chanterelle mushrooms and cook for another 2 minutes. Pour in cream and cook until mushrooms are tender, 5 to 10 minutes.
  • Combine flour and water, then mix into the mushrooms. Boil the mixture and season with salt, herbes de Provence, and pepper to enhance flavor.
