Prepare a cheesy chicken and rice dish in abundance for delicious leftovers.
Ingredients:
  • 4 cups cooked white rice
  • 0.25 cup all-purpose flour
  • 2 teaspoons chicken bouillon powder
  • 1 teaspoon seasoned salt
  • 0.5 teaspoon garlic powder
  • 5 cups cooked, shredded chicken breast meat
  • 12 ounces processed cheese food (eg. Velveeta), cubed
  • 2 cups sour cream
  • 0.5 cup butter
  • 2 cups crushed buttery round crackers
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Prepare the baking dish by evenly layering the rice on the bottom; then, let it sit while you move on to the next step.
  • Melt butter in a medium saucepan, then whisk in flour until smooth. Slowly pour in milk and add bouillon, seasoned salt, garlic powder, and pepper. Bring to a boil, then simmer and stir for 2 minutes until thickened. Lower the heat and mix in chicken, cheese, and sour cream until cheese is melted. Pour mixture over rice and enjoy.
  • In a saucepan, melt 1/2 cup of butter or margarine. Combine with crushed cracker crumbs and sprinkle over the casserole. Bake in the preheated oven until heated through, about 10 to 15 minutes.
