Creamy Chicken Lasagna

Creamy chicken lasagna made with tender poached chicken, cream cheese, and gooey mozzarella in a decadent red sauce.
Ingredients:
  • 6 uncooked lasagna noodles
  • 3 skinless, boneless chicken breast halves
  • 2 cups shredded mozzarella cheese, divided
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup hot water
  • 1 cube chicken bouillon
  • 1 (26 ounce) jar spaghetti sauce
Instructions:
  • Preheat the oven to a toasty 350°F (175°C).
  • Bring a large pot of salted water to a boil. Cook lasagna noodles until al dente, about 8 minutes. Drain, rinse with cold water, and set aside.
  • Place the chicken in a saucepan, ensuring it is covered with water, and bring it to a boil. Cook for about 20 minutes or until the chicken is cooked through. Remove the chicken from the saucepan and shred it.
  • In a large bowl, mix shredded chicken, 1 cup of mozzarella cheese, and cream cheese. Dissolve bouillon in hot water, then pour over the chicken mixture. Stir until everything is well combined.
  • Begin by layering a third of the spaghetti sauce in the bottom of a 9x13-inch baking dish. Add half of the chicken mixture, followed by 3 lasagna noodles. Repeat these layers. Finally, top with the remaining sauce and sprinkle the remaining cup of mozzarella cheese over the top.
  • Roast in the oven that's already heated for 45 minutes.
