Chicken Cordon Bleu Lasagna

Ingredients:
  • 1/3 cup plus 2 tablespoons butter
  • 1 cup Progresso™ Panko Italian style crispy bread crumbs
  • 2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 2/3 cup milk
  • 2 1/2 teaspoons Dijon mustard
  • 4 teaspoons chopped fresh thyme leaves
  • 1/4 teaspoon pepper
  • 1/3 cup Gold Medal™ all-purpose flour
  • 1 package (8 oz) cream cheese, cubed
  • 1 1/4 cups shredded Swiss cheese (4 oz)
  • 12 uncooked oven-ready lasagna noodles
  • 3 cups shredded cooked chicken
  • 1 cup chopped cooked ham
  • 2 cups shredded Monterey Jack cheese (8 oz)
  • Additional chopped fresh thyme leaves or Italian (flat-leaf) parsley, if desired
Instructions:
  • Preheat oven to 375°F and coat a 13x9-inch (3-quart) glass baking dish with cooking spray. Melt 2 tablespoons of butter in a microwave-safe bowl for 20 to 40 seconds on High. Mix in bread crumbs until well combined; set aside.
  • In a 4-cup glass measuring cup, combine the broth, milk, mustard, thyme, and pepper; set aside. In a 4-quart saucepan, melt the remaining 1/3 cup of butter over medium heat. Whisk in the flour until smooth and cook for 1 to 2 minutes until the mixture is smooth and bubbly. Gradually pour the broth mixture into the saucepan. Increase the heat to medium-high and bring to a boil, stirring constantly. Boil and stir for 1 minute, then reduce the heat to medium. Add the cream cheese and Swiss cheese, and cook, whisking until the cheeses are melted and the mixture is smooth. Remove from heat.
  • Begin by smoothly spreading 1 cup of the sauce at the base of the baking dish, then layer 3 noodles on top. Spoon 1 cup of the chicken, 1/3 cup of the ham, 1 cup of the sauce, and 1/2 cup of the Monterey Jack cheese over the noodles. Repeat this step twice, initiating each new layer with noodles. Finish by adding the remaining noodles, sauce, and cheese on top. Cover with a piece of foil that has been sprayed with cooking spray on the underside and bake for 35 minutes.
  • Take the dish out of the oven, remove the cover, and sprinkle the bread crumb mixture on top. Bake without covering for 10 to 15 minutes until the bread crumbs are lightly browned, the noodles are tender, and the edges are bubbly. Allow it to sit for 20 minutes before serving, and add a finishing touch of extra thyme as a garnish.
