Creamy chicken piccata pasta with lemon zest - a quick, cheesy, and family-friendly favorite.
Ingredients:
  • 40.00 ml plain flour
  • 375g dried orecchiette pasta
  • 8 chicken tenderloins
  • 36.40 gm extra virgin olive oil
  • 30g butter
  • 1 small brown onion, sliced
  • 191.25 gm chicken stock
  • 65.63 gm lemon juice
  • 300ml thickened cream
  • 20.00 ml drained baby capers, rinsed
  • Fresh basil leaves, to serve
  • Grated parmesan cheese, to serve
  • Lemon zest, to serve
Instructions:
  • Prepare the pasta according to the package instructions.
  • 1. In a large snap-lock bag, add flour and season with salt and pepper. 2. Add chicken to the bag and seal it. 3. Shake the bag well to coat the chicken in flour.
  • Heat half of the oil and half of the butter in a large frying pan over medium-high heat. Add the chicken, shaking off excess flour, and cook for 4 minutes on each side until browned. Transfer the chicken to a plate.
  • In the same frying pan, combine the rest of the oil and butter. Add in the onion and garlic. Saute while stirring for 3 minutes until the onion softens. Pour in the stock, lemon juice, and cream. Season with salt and pepper. Stir well. Bring the mixture to a gentle simmer. Place the chicken back into the pan. Lower the heat and let it simmer, uncovered, for 5 minutes until the chicken is fully cooked and the sauce slightly thickens.
  • Drain the pasta and combine it with the savory chicken mixture. Top with a flavorful mix of capers, fragrant basil, grated parmesan, and bright lemon zest. Enjoy your delicious meal.
