Cheesy chicken and veggie casserole - a colorful one-pot wonder!
Ingredients:
  • 2 cups sliced fresh mushrooms
  • 0.75 cup chopped red or yellow sweet pepper, or combination
  • 0.5 cup chopped onion
  • 2 tablespoons butter
  • 0.25 cup all-purpose flour
  • 0.75 teaspoon salt
  • 0.5 teaspoon dried thyme or marjoram, crushed
  • 0.25 teaspoon black pepper
  • 2 cups milk
  • 1 (10 ounce) package frozen chopped spinach, thawed and well drained
  • 2 cups cooked brown or white rice
  • 2 (6 ounce) packages Tyson® Grilled & Ready® Refrigerated Diced Chicken Breast
  • 0.5 cup finely shredded Parmesan cheese
Instructions:
  • First, preheat the oven to 350 degrees F. Then, in a large skillet, sauté mushrooms, sweet pepper, onion, and garlic in butter until tender. Add flour, salt, thyme, and black pepper, then slowly pour in milk while stirring until the mixture thickens. Finally, add spinach, rice, Grilled & Ready® Diced Chicken, and 1/4 cup Parmesan cheese.
  • Transfer the mixture into a 2-quart rectangular baking dish. Top with the remaining Parmesan cheese. Bake covered for 20 minutes, then uncover and bake for an additional 10 minutes until heated through. Allow it to rest for 15 minutes before serving.
