Creamy chicken and vegetable brown rice casserole - a simple and delicious side dish.
Ingredients:
  • cooking spray
  • 1 (14 ounce) can beef broth
  • 1 cup uncooked brown rice
  • 1 cup finely diced carrots
  • 0.5 cup milk
  • 1 (4 ounce) can sliced mushrooms, drained
  • 0.5 cup condensed cream of chicken soup
  • 0.25 cup butter
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Coat a 2-quart casserole dish with cooking spray.
  • Combine beef broth, brown rice, carrots, milk, mushrooms, cream of chicken soup, and butter in a bowl, stirring until fully mixed.
  • Transfer the mixture into the casserole dish that has been prepared.
  • Cook in the oven, uncovered, until the liquid is absorbed and the rice is tender, for about 1 hour.
