Smokey chipotle-infused tomato cream soup with tortilla strips, cilantro, and lime garnish.
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 cup onion, chopped
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.25 teaspoon salt
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tablespoon adobo sauce from chipotle peppers
  • 1 (14.5 ounce) can Hunt's® Fire Roasted Diced Tomatoes with Garlic
  • 3 cups chicken broth
  • 0.75 cup heavy cream
Instructions:
  • In a saucepan over medium heat, warm olive oil. Sauté onion until soft and translucent, about 6-7 minutes. Mix in cumin, chili powder, and salt. Stir in chipotle peppers and Adobo sauce.
  • Combine the tomatoes and chicken broth in a pot and bring to a gentle simmer over low heat. Cover the pot and let it simmer for 5 to 6 minutes. Remove from heat.
  • Let mixture cool slightly. Use an immersion blender to puree until smooth. Gently mix in heavy cream and adjust salt to taste. Warm bisque slowly without boiling. Serve promptly.
