Creamy chorizo pasta: quick and flavorful weeknight meal.
Ingredients:
  • 180ml Cooking Cream
  • 250g fresh chorizo sausages (2 sausages), skinned and roughly chopped
  • 400g dried penne pasta
  • 100g rind-less shortcut bacon rashers, chopped
  • 1 medium red onion, cut into fine wedges
  • 2 cloves garlic, finely chopped
  • 2.50 gm smoky paprika
  • Handful fresh parsley leaves, finely chopped
  • 275.00 gm tomato pasta sauce
  • Handful baby spinach leaves, shredded
  • Grated parmesan, to serve
Instructions:
  • Boil pasta in a large pot of salted water according to package instructions until al dente. Drain the pasta.
  • Cook chorizo and bacon in a non-stick pan over medium-high heat, stirring occasionally, until crisp, about 6 to 8 minutes.
  • Sauté onion and garlic until soft, about 2 minutes. Stir in paprika, parsley, pasta sauce, and cooking cream. Season with salt and pepper, then mix well.
  • Combine the pasta and spinach with the sauce until fully coated.
  • Garnish with freshly grated parmesan cheese before serving.
