Penne with chorizo and creamy tomato sauce

Whip up a delicious chorizo penne pasta with creamy tomato sauce for a quick weeknight meal.
Ingredients:
  • 375g penne
  • 2 chorizo, coarsely chopped
  • 1 red onion, thinly sliced
  • 2 x 200g punnet perino grape tomatoes
  • 22.20 gm tomato paste
  • 125.00 ml finely shredded basil
  • Basil leaves, extra, to serve
  • Shaved parmesan, to serve
Instructions:
  • Boil the penne in a large saucepan of water according to the package instructions until it is al dente, then drain thoroughly.
  • Heat a large frying pan over high heat. Cook the chorizo, stirring occasionally, for 3 minutes until browned all over. Transfer to a plate using a slotted spoon and drain excess fat from the pan.
  • Sauté the onion and garlic until softened. Add the chorizo and tomatoes, cook until tomatoes soften. Stir in tomato paste, then add cream and bring to a boil. Cook until the sauce slightly thickens, stirring constantly.
  • Combine the basil and pasta with the sauce mixture, tossing well. Serve in bowls and garnish with extra basil and parmesan.
