Cajun cilantro cream chicken with red potatoes and veggies.
Ingredients:
  • 6 thin skinless, boneless chicken breasts
  • 1 tablespoon Cajun seasoning, divided
  • salt and ground black pepper to taste
  • 4 green onions, sliced
  • 1 red bell pepper, sliced
  • 2 cups chicken broth
  • 0.25 cup dry white wine
  • 0.75 cup heavy cream
  • 0.5 cup halved cherry tomatoes
  • 0.5 cup chopped cilantro
Instructions:
  • Pat the chicken breasts until they are dry and generously sprinkle them with half of the flavorful Cajun seasoning, along with a pinch of salt and pepper. Set aside for later.
  • In a large skillet over medium-high heat, sizzle the chicken in hot olive oil, ensuring both sides are golden brown and the juices run clear when pierced with a fork, for 5 to 7 minutes. Set aside the cooked chicken on a plate, keeping the flavorful drippings in the skillet.
  • Combine green onions and bell pepper with the drippings in the skillet, cooking until tender, approximately 1 minute. Pour in chicken broth and wine, bringing to a boil in about 5 minutes. Simmer until liquids reduce to around 3/4 cup, another 5 minutes. Pour in cream and simmer slightly for 1 to 2 minutes. Finally, fold in tomatoes and cilantro along with the remaining Cajun seasoning, and season with salt and pepper as needed.
  • Place the chicken in the skillet, cover, and heat through for about 3 minutes.
