Unique twist with fresh fennel in coleslaw.
Ingredients:
  • 1.5 pounds green cabbage, finely shredded
  • 1 red onion, finely shredded
  • 2 carrots, peeled and finely shredded
  • 1 large fennel bulb, finely shredded
  • 3 tablespoons finely chopped fresh parsley
  • 1.5 cups mayonnaise
  • 0.75 cup raspberry chardonnay vinegar
  • 0.75 cup white sugar
  • 0.25 cup vegetable oil
  • 2 tablespoons dry mustard
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Instructions:
  • Combine cabbage, onion, carrot, fennel, and parsley in a spacious bowl.
  • Combine mayonnaise, vinegar, sugar, oil, mustard, salt, and pepper in a separate bowl, then pour over cabbage mixture and toss until coated.
  • Chill the mixture in the refrigerator for about 30 minutes, covered with plastic wrap.
