Creamy corn and cheddar bake

Creamy corn and cheddar bake pairs perfectly with grilled meats.
Ingredients:
  • 20g butter
  • 1 brown onion, finely chopped
  • 2 bacon rashers, finely chopped
  • 1 garlic clove, crushed
  • 1 long fresh red chilli, seeded, finely chopped
  • 435g corn cob
  • 2 eggs, lightly whisked
  • 125g sour cream
  • 80g cheddar cheese
  • 70g breadcrumbs
  • Pinch cayenne pepper or smoked paprika
Instructions:
  • Preheat the oven to 180C. In a large saucepan over medium heat, melt the butter until sizzling. Sauté the onion, bacon, garlic, and chili for 5 minutes until the onion softens. Stir in the corn and mix well. Remove from heat and transfer the mixture to a bowl.
  • Combine eggs, sour cream, and half of the cheese in a bowl. Mix well and season with salt and pepper. Transfer the mixture to a 4-cup (1 litre) baking dish. In a separate bowl, combine breadcrumbs, cayenne or paprika, and the remaining cheese. Sprinkle the mixture evenly over the corn mixture.
  • Place in a hot oven for 30 minutes or until beautifully golden and the topping is crunchy. Serve right away.
