Beef and chile filled corn tortillas baked with tomato sauce, sour cream, green onions, and Cheddar cheese.
Ingredients:
  • 1 cup chopped onion
  • 1 pound sirloin steak, cut into bite size strips
  • 1 teaspoon minced garlic
  • 2 (7 ounce) cans diced green chile peppers
  • 4 cups tomato sauce, divided
  • 2 teaspoons chili powder
  • 1 (12 ounce) package corn tortillas
  • 0.5 cup fresh salsa
  • 0.75 cup chopped black olives, drained
  • 2 cups shredded Cheddar cheese
  • 0.5 cup sour cream
  • 0.33333298563957 cup chopped green onion
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and give a gentle grease to a big casserole dish.
  • Sauté onions in a skillet over medium heat until almost translucent. Add beef, garlic, and chile peppers; cook until meat is no longer pink. Stir in tomato sauce and chili powder, then mix well and heat through. Remove from heat.
  • Fill each corn tortilla with a generous amount of the seasoned meat mixture, topped with salsa, Cheddar cheese, and olives. Roll up the tortillas and arrange them neatly in the baking dish. Remember to set aside 1/2 cup of Cheddar cheese for the final touch.
  • Drizzle remaining tomato sauce and sour cream over the tortillas. Sprinkle with green onions and top with 1/2 cup of Cheddar cheese.
  • Bake in the preheated oven for 30 minutes, or until hot and bubbly.
