Creamy dairy-free mashed potatoes made with chicken stock for a rich and delicious flavor without the dairy.
Ingredients:
  • 2 pounds baking potatoes, scrubbed
  • 0.5 cup low-sodium chicken stock, or more as needed
  • 3 cloves garlic, smashed, or more to taste
  • 0.5 teaspoon salt
  • freshly ground black pepper to taste
  • 1 teaspoon chopped fresh parsley, or to taste
Instructions:
  • Quarter the potatoes, then boil them in salted water until tender, about 15 to 20 minutes. Drain and allow to dry.
  • Combine potatoes with chicken stock and garlic in the pot, then mash until smooth using a potato masher. Adjust consistency with more stock if desired, season with salt and pepper, and top with parsley for a finishing touch.
