Creamy dairy-free nice cream with tangy dried cherries and rich vegan chocolate chips.
Ingredients:
  • 0.25 cup raw cashews
  • 1 ripe banana
  • 1 cup ice cubes
  • 3 ounces extra-firm tofu, pressed to remove water
  • 2 Medjool dates, pitted
  • 0.33333334326744 cup cacao powder
  • 2 teaspoons vanilla extract
  • 1 teaspoon soy milk, or more as needed
  • 0.33333334326744 cup dried cherries, chopped
  • 0.33333334326744 cup vegan chocolate chips
Instructions:
  • In a bowl, submerge cashews in water and soak for 1 to 3 hours. Drain before use.
  • In a blender, blend soaked cashews, banana, ice cubes, tofu, dates, cacao powder, vanilla extract, and 1 teaspoon of soy milk until smooth. If needed, add an extra teaspoon of soy milk for desired thickness.
  • Combine the cherries and chocolate chips, then transfer the mixture to a serving bowl.
