Buttery Cherry-Chip Scones (White Whole Wheat Flour)

Indulgent cherry chocolate chip scones, ideal for breakfast or brunch with a hot drink.
Ingredients:
  • 2 cups Gold Medal™ white whole wheat flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold butter or margarine, cut into 8 pieces
  • 1/2 cup dried cherries
  • 1/2 cup miniature semisweet chocolate chips
  • 1 egg, beaten
  • 1 teaspoon vanilla or almond extract
  • 1/2 cup whipping cream
  • Additional sugar, if desired
Instructions:
  • Preheat oven to 400°F.
  • Combine flour, sugar, baking powder, and salt in a large bowl. Use a pastry blender to cut in the butter until mixture resembles fine crumbs. Gently fold in cherries, chocolate chips, egg, vanilla, and whipping cream until dry ingredients are just moistened.
  • Place the dough on a lightly floured surface and gently coat it with flour. Knead lightly 10 times. Transfer the dough to an ungreased cookie sheet and shape it into an 8-inch circle. Cut it into 8 wedges with a sharp knife dipped in flour, without separating them. Sprinkle with sugar.
  • Bake for 18 to 20 minutes until beautifully golden. Remove from the tray as soon as it's done baking; gently split the wedges and serve while still warm.
