Sweet Dark Cherry Cobbler

Bake cherry filling under buttery dough for a delicious cobbler. Enjoy warm with vanilla ice cream.
Ingredients:
  • 2 tablespoons cornstarch
  • 0.5 teaspoon ground cinnamon
  • 0.75 cup water
  • 1 (12 ounce) bag frozen pitted dark sweet cherries, thawed
  • 0.25 cup white sugar, divided
  • 2 teaspoons baking powder
  • 3 tablespoons shortening
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously grease an 8-inch square baking dish.
  • In a large saucepan, mix 1/2 cup of sugar, cornstarch, and cinnamon until well combined; stir in water until smooth. Add cherries and butter and bring to a boil; cook and stir until the cherry mixture thickens, around 2 minutes. Pour the cherry filling into the baking dish.
  • In a bowl, combine flour, 2 tablespoons sugar, baking powder, and salt. Use a pastry blender to cut in shortening until mixture looks like coarse crumbs. Gently mix in milk until just moistened. Spoon the topping over the cherry filling, then sprinkle the remaining 2 tablespoons of sugar on top.
  • Bake until the topping turns a beautiful golden brown, about 30 to 35 minutes in the preheated oven.
