Chocolate Chip-Cherry Bars

Indulge in these decadent chocolate-cherry bars for the ultimate sweet treat.
Ingredients:
  • 1 jar (10 oz) maraschino cherries
  • 1 cup powdered sugar
  • 1 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips (6 oz)
  • 2 tablespoons butter or margarine, softened
  • Reserved cherry juice
Instructions:
  • Preheat oven to 325°F. Grease a 13x9-inch pan with shortening or cooking spray. Drain maraschino cherries, saving juice for later; finely chop cherries and pat dry with a paper towel.
  • In a large bowl, whip together 1 cup powdered sugar and 1 cup butter using an electric mixer until thoroughly combined. Mix in vanilla and eggs. Then, on low speed, incorporate flour, baking soda, and salt. Gently fold in 1 cup chocolate chips and cherries. Transfer the batter to the pan and spread evenly.
  • Bake for 30 to 35 minutes, or until the top is golden brown. Sprinkle with 1 cup of chocolate chips as soon as it's out of the oven. Allow it to sit for 5 minutes to let the chocolate soften, then spread it evenly over the crust.
  • Combine 1 cup of powdered sugar, 2 tablespoons of butter, and 2 to 3 tablespoons of reserved cherry juice in a small bowl until you have a smooth, pourable consistency. Drizzle the mixture over the chocolate and let it cool for about 45 minutes. To make bars, cut into 8 rows by 4 rows. Enjoy!
