Chocolate Chip and Cherry-Banana Bread

Indulge in a modern twist on classic banana bread with a decadent blend of chocolate chips and cherries.
Ingredients:
  • 3/4 cup sugar
  • 1/2 cup butter or margarine, softened
  • 1 cup mashed very ripe bananas (2 medium)
  • 1/2 cup sour cream
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup miniature semisweet chocolate chips
  • 1 cup halved red and green candied cherries
  • 1/2 cup chopped nuts
Instructions:
  • Preheat oven to 350°F. Grease only the bottom of a 9x5x3-inch loaf pan or two 8 1/2x4 1/2x2 1/2-inch pans with shortening and lightly flour.
  • In a large bowl, cream together sugar and butter until well combined using an electric mixer or stirring with a spoon. Mix in bananas, sour cream, and eggs. Fold in flour, baking soda, and salt. Gently mix in chocolate chips, cherries, and nuts. Transfer the batter into a pan.
  • Bake the bread for 45 to 55 minutes or until a toothpick inserted in the center comes out clean. If the bread gets too brown, simply cover it loosely with aluminum foil about 10 minutes before the baking time ends. Allow it to cool for 15 minutes. Loosen the sides of the loaf from the pan(s) and transfer it to a wire rack. Let it cool completely for about 1 hour.
