Creamy Carbonara Twist: Silky sauce with egg, parmesan, and cream coats hot pasta for an umami bomb. Easy and foolproof twist on the classic recipe.
Ingredients:
  • 375g fresh fettuccine pasta
  • 20g butter
  • 175g shortcut bacon rashers, chopped
  • 2 garlic cloves, crushed
  • 2 tsp fresh rosemary, finely chopped
  • 2 x Free Range Eggs
  • 2 egg yolks
  • 125.00 ml light thickened cooking cream
  • 82.50 ml parmesan, finely grated
Instructions:
  • Prepare pasta according to the package instructions.
  • In a frying pan over medium heat, melt butter, then add bacon and cook until golden brown, about 4 minutes. Stir in garlic and rosemary, and cook for another minute until fragrant.
  • In a bowl, combine eggs, yolks, cream, and parmesan. Season with salt and pepper. Drain pasta and return it to the saucepan. Add the egg mixture and bacon mixture to the pasta. Cook over low heat for 1 minute, tossing until the sauce thickens and coats the pasta. Serve hot.
