Fettuccine Carbonara

Indulgent fettuccine carbonara: bacon, shallots, garlic, creamy sauce tossed with pasta.
Ingredients:
  • 5 teaspoons olive oil
  • 4 shallots, diced
  • 1 pound bacon, cut into strips
  • 1 large onion, cut into thin strips
  • 1 clove garlic, chopped
  • 1 (16 ounce) package dry fettuccine pasta
  • 0.75 cup shredded Parmesan cheese
  • 0.5 cup heavy cream
  • 3 egg yolks
  • salt and pepper to taste
Instructions:
  • In a large heavy saucepan over medium heat, sizzle shallots in olive oil until softened. Add bacon and onion, cook until bacon is evenly browned, then mix in garlic halfway through cooking the bacon. Take off the heat.
  • Boil a large pot of salted water. Cook pasta until al dente (8-10 minutes). Drain and return pasta to the pot.
  • Combine Parmesan, cream, and egg yolks in a bowl, whisking until smooth. Pour bacon mixture over cooked pasta, then mix in the creamy sauce. Season generously with salt and pepper.
