One-pot creamy French-style chicken with sweet carrot and salty bacon. Easy and delicious!
Ingredients:
  • 6 Australian Chicken Thigh Fillets, halved
  • 2 celery sticks, thinly sliced
  • 2 bacon rashers, chopped
  • 4 shallots, halved
  • 150g cup mushrooms, thinly sliced
  • 2 garlic cloves, crushed
  • 40.00 ml plain flour
  • 435ml chicken stock
  • 1 bunch Dutch carrots*, trimmed, peeled
  • 3 thyme sprigs
  • 125ml thickened cream
Instructions:
  • In a large heavy-based saucepan over medium heat, heat 2 tsp of oil until shimmering. Add the chicken and cook for 5 mins, turning occasionally, until golden brown all over. Transfer to a plate.
  • In the same pan, heat the remaining oil. Cook celery, bacon, and shallot, stirring occasionally, until shallot softens, about 5 minutes. Add mushroom and garlic, stirring, until mushroom is golden brown, about 3-4 minutes.
  • Sprinkle in the flour over the mushroom mixture and stir continuously for 2 minutes until well mixed. Slowly pour in the stock while gently stirring. Add the carrots and thyme, then bring to a boil. Lower the heat, cover, and simmer for 10 minutes. Finally, add the chicken back into the pan, cover, and continue cooking for another 10 minutes.
  • Pour in the luscious cream and gently mix until everything melds together perfectly. Simmer without a lid for 5 minutes, ensuring the chicken is beautifully cooked and the carrots are delightfully tender. Season to your liking before serving.
