Speedy creamy gnocchi with veggies and herbed cheese sauce is a meatless Monday must-have made in a flash from prepared gnocchi and frozen veggies.
Ingredients:
  • 2 tablespoons butter
  • 12 ounce package gnocchi
  • 8 ounce frozen mixed vegetables, such as Birds Eye® Normandy blend
  • 1/2 cup evaporated milk
  • 1 tablespoon pesto
  • 2 ounces spreadable cheese, such as alouette ®  garlic & herbs soft spreadable cheese
Instructions:
  • In a skillet over medium heat, melt butter until sizzling. Add gnocchi and vegetables, sauté until vegetables are tender and gnocchi is golden, approximately 5 minutes.
  • Combine evaporated milk, pesto, and alouette cheese, stirring continuously until the sauce is velvety and fully coats the gnocchi and vegetables. This should take around 5 minutes. Serve right away.
