Super-easy gnocchi

Homemade or store-bought gnocchi with creamy sauce - comfort food that's affordable and easy.
Ingredients:
  • 1 kg floury potatoes such as Maris Piper
  • 80 g plain flour plus extra for dusting
  • 4 rashers of smoked back bacon
  • 2 cloves of garlic
  • 200 g frozen peas
  • 150 ml single cream
  • 75 g mature Cheddar cheese
Instructions:
  • Start by washing the potatoes, then prick them with a knife and microwave on high for 25 minutes until tender, flipping halfway. After cooling, peel off the skins and mash the potatoes using a ricer or masher on a clean board. Season with salt and pepper, then mix in flour by hand. Knead on a floured surface, divide into 4 pieces, and roll each into a 2cm thick sausage. Cut into 3cm pieces and create grooves with a fork or grater. In a pan of boiling water, cook the gnocchi for 2-3 minutes until they float to the surface. Meanwhile, fry bacon until crisp, add garlic, peas, cream, and most of the cheese. Stir in cooked gnocchi, adding water if needed. Season and serve, grating over remaining cheese.
