Creamy Herbed Vegetables

Creamy veggie casserole infused with aromatic herbs, ready in just 40 minutes. Perfect for a delightful dinner.
Ingredients:
  • 1 package (16 ounces) frozen broccoli, carrots and cauliflower
  • 2 tablespoons margarine or butter
  • 2 tablespoons all-purpose flour
  • 1/4 cup milk
  • 1 1/2 cups small curd creamed cottage cheese
  • 1 tablespoon chopped fresh or 1 teaspoon dried marjoram leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup coarsely crushed round buttery crackers (about 20 crackers)
Instructions:
  • Preheat oven to 375°F and generously grease an 8x8x2-inch square pan.
  • Cook the vegetables according to the package instructions, then drain them. Arrange the cooked vegetables evenly in the pan.
  • In the same saucepan over medium heat, melt margarine. Add flour and mix well. Slowly pour in milk while stirring constantly. Bring to a boil, then remove from heat. Add cottage cheese, marjoram, salt, and pepper, and mix. Pour the sauce over the vegetables and top with cracker crumbs.
  • Bake for 20-25 minutes until the edges are bubbly and the crumbs are lightly browned.
