Creamy Irish potato soup with hints of celery and green onions, ready in 45 minutes.
Ingredients:
  • 2 tablespoons butter or margarine
  • 4 medium green onions, sliced
  • 1 stalk celery, sliced
  • 3 medium potatoes, peeled and sliced 1/4 inch thick
  • 1.75 cups Swanson® Chicken Broth or Swanson® Certified Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth
  • 0.125 teaspoon ground black pepper
  • 1.5 cups milk
Instructions:
  • In a 3-quart saucepan, melt butter over medium heat. Saute green onions and celery until onions are translucent, for about 5 to 7 minutes, stirring occasionally.
  • Combine potatoes, broth, and pepper in a pot and bring to a boil. Lower the heat, cover, and simmer until the potatoes are tender, approximately 15 minutes. Stir in milk and use an immersion blender to achieve a smooth consistency. Cook until heated through for an additional 3 to 5 minutes.
