Creamy hummus with a hint of peanut butter - perfect for dipping chips, veggies, or spreading on sandwiches. Deliciously versatile!
Ingredients:
  • 1 (15 ounce) can chickpeas
  • 1 tablespoon peanut butter
  • 2 tablespoons lemon juice
  • 1 teaspoon sesame oil
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 clove garlic, minced
  • 1 tablespoon sliced green onions, or to taste
Instructions:
  • In a bowl, mix together 2 tablespoons of chickpea liquid with 1 cup of chickpeas to make hummus. Save the rest of the chickpeas and liquid for later use.
  • In a blender, combine olive oil, peanut butter, lemon juice, sesame oil, cumin, onion powder, and salt. Blend until smooth for about 2 minutes. Add chickpeas and their liquid, blend until creamy for 2 to 5 minutes.
  • Chill the mixture in an airtight container in the refrigerator for a minimum of 2 hours. Top with green onions before serving.
