Ingredients:
  • 3 cups dry garbanzo beans, soaked overnight
  • 1 pinch baking soda
  • 0.5 cup extra-virgin olive oil
  • 0.75 cup tahini paste
  • 0.25 cup fresh lemon juice, or more to taste
  • 1 large clove garlic, minced, or more to taste
  • 1 teaspoon ground cumin
  • salt to taste
  • 1 tablespoon extra virgin olive oil, for drizzling
Instructions:
  • Wash the garbanzo beans thoroughly and place them in a pot. Cover them with water by at least 1 inch, adding baking soda if desired. Boil, then simmer over medium heat until the beans are very soft, for 1 1/2 to 2 hours.
  • Strain the beans, keeping some of the water aside for later use. Set aside a small handful of whole beans for garnish. Puree the remaining beans in a blender or large bowl using a hand blender. Gradually incorporate 1/2 cup of olive oil while blending until smooth. Add reserved water if necessary to aid in blending. Mix in the tahini and lemon juice, followed by the garlic, cumin, and salt.
  • Evenly spread the hummus on a flat serving dish, then top it with the reserved beans and a generous drizzle of olive oil for extra flavor.
