Za'atar blend enhances meat and salads with authentic Egyptian flavors.
Ingredients:
  • 80g sesame seeds
  • 50g hazelnuts
  • 40.00 ml coriander seeds
  • 20.00 ml cumin seeds
  • Turkish bread toasted, to serve
Instructions:
  • Preheat the oven to 170°C. Spread sesame seeds on a baking tray and roast for 12-15 minutes until golden brown. Transfer the toasted seeds to a bowl to cool. Then, spread hazelnuts on the tray and roast for 10 minutes until aromatic. Remove from the oven and rub off the skins with a tea towel before finely chopping them.
  • Toast coriander and cumin seeds in a small frying pan over medium heat for 4-5 minutes until aromatic.
  • Grind toasted spices into a fine powder using a mortar and pestle. Add sesame seeds, grind until well combined, and sesame seeds break down slightly. Stir in chopped hazelnuts and season with salt and pepper.
