Ingredients:
  • 4 egg yolks
  • 17.70 gm Dijon mustard
  • 300ml canola oil
  • 300ml olive oil
  • 20.00 gm warm water
  • juice of 1/2 lemon
  • Salt and pepper, to season
Instructions:
  • In a food processor, blend 4 egg yolks and 3 teaspoons of Dijon mustard until combined. While the motor is running, gradually add 300ml canola oil and 300ml olive oil until mixture thickens. Pour in 1 tablespoon warm water halfway through, then mix in juice of 1/2 lemon and season with salt and pepper.
