Elevate your backyard BBQ with our classic potato salad recipe featuring the perfect balance of creamy mayonnaise and tangy sour cream.
Ingredients:
  • 2 pounds Yukon Gold potatoes (you can leave the peel on if you want), cut into 1-inch pieces
  • 6 slices bacon
  • 3/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 teaspoons mustard (your favorite: yellow, Dijon, stone ground)
  • 1/2 cup thinly sliced green onions
  • 1/2 cup chopped celery
  • 1/4 cup chopped parsley
  • 2 dill pickles, chopped into 1/4 in cubes (about 3/4 cup)
  • Coarse salt
  • Freshly ground pepper
Instructions:
  • Prepare the potatoes: Place potatoes in a large pot and cover them with cold, salted water. Bring to a boil, then reduce to a simmer until tender when pierced with a fork, about 20 minutes. Drain and rinse with cold water to halt cooking. Optionally, mix in pickle juice while potatoes are warm to enhance flavor.
  • Cook the bacon by heating a frying pan on medium low heat. Arrange the bacon strips in a single layer and cook until lightly browned, turning occasionally with tongs. Transfer to a plate lined with paper towels to absorb excess fat. Dispose of the fat properly by pouring it into a jar or soaking it up with paper towels. Once cooled, finely chop the bacon.
  • Prepare the potato salad by blending sour cream, mayonnaise, and mustard in a large bowl. Season with a pinch of salt and pepper. Fold in the potatoes using a rubber spatula, then delicately mix in green onions, celery, parsley, pickles, and bacon. For extra flavor, incorporate a couple of tablespoons of pickle juice.
