Time-tested classic potato salad recipe.
Ingredients:
  • 800g coliban potatoes, cut into 3cm pieces
  • 4.60 gm olive oil
  • 3 middle bacon rashers, trimmed, finely chopped
  • 4 small gherkins, halved lengthways, sliced
  • 1 celery stalk, halved, sliced
  • 2 green onions, sliced
  • 2 hard-boiled eggs, quartered (see Notes)
  • 123.75 gm mayonnaise
  • 2 tsp apple cider vinegar
  • 5.90 gm Dijon mustard
  • 40.00 ml fresh dill, finely chopped
Instructions:
  • 1. Add the potato to a saucepan and cover it with cold water. 2. Bring it to a boil over high heat, then reduce heat to medium. 3. Let it cook for 12 to 15 minutes until the potatoes are just tender. 4. Drain and allow to cool completely before using.
  • Heat oil in a small frying pan over medium-high heat. Add bacon and cook, stirring occasionally, until lightly browned, about 5 minutes. Transfer bacon to a paper towel-lined plate to drain excess oil.
  • Create a luscious dressing by blending all the ingredients in a small jug and then seasoning with salt and pepper.
  • Combine the potato, bacon, gherkin, celery, onion, and egg in a spacious bowl. Drizzle in the dressing, then delicately mix everything together. Serve and enjoy!
