Creamy mushroom stew: Rich, comforting, and packed with fresh flavors. Pair with crusty bread to savor every drop.
Ingredients:
  • 2 tablespoons unsalted butter
  • 0.5 cup chopped onions
  • 0.5 large carrot, peeled and diced
  • 8 ounces white button mushrooms, sliced
  • 8 ounces baby bella mushrooms, sliced
  • 0.5 cup frozen peas
  • 3 cloves garlic, minced
  • 0.5 teaspoon dried thyme
  • 0.33333334326744 cup beef broth
  • 2 tablespoons dry sherry
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon tomato paste
  • 0.33333334326744 cup heavy cream
  • salt and freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a large skillet over medium heat, melt butter. Sauté onions and carrot for 3 minutes. Add mushrooms and cook for another 5 minutes. Mix in peas, garlic, and thyme, and continue cooking until mushroom moisture evaporates, about 4 minutes.
  • Combine beef broth, sherry, soy sauce, and tomato paste in the pot. Simmer over medium-low heat for 5 minutes.
  • Drizzle creamy heavy cream over the savory mushroom blend and generously season with salt and pepper. Gently mix until fully incorporated and the mixture begins to thicken, approximately 2 to 3 minutes. Adjust the consistency by adding a splash of beef broth if it's too thick or letting it simmer longer if it's too thin until you reach the perfect texture.
  • Top off with fresh, vibrant chopped parsley before presenting.
