Indulge in creamy, flavorful mustard veal - perfect for family meals.
Ingredients:
  • 375g cherry truss tomatoes
  • 225g dried pappardelle pasta
  • 62.50 ml plain flour
  • 650g veal scallopini
  • 50g butter
  • 165.00 gm dry white wine
  • 165.00 gm creme fraiche
  • 83.33 gm pure cream
  • 23.40 gm wholegrain mustard
  • 20.00 ml finely chopped fresh chives
  • Steamed green beans, to serve
Instructions:
  • In a large frying pan over medium heat, heat oil until shimmering. Add tomatoes and cook for 5 minutes, or until the skins begin to split. Transfer to a plate and cover to keep warm.
  • Boil pasta in a large saucepan of salted water according to package instructions until tender. Drain and cover to keep warm.
  • Begin by generously coating a large plate with flour. Gently coat both sides of the veal with a light dusting of flour. Melt half of the butter in a pan over medium-high heat. Add half of the veal to the pan and cook each side for 1 to 2 minutes for medium doneness, or until it reaches your desired level of doneness. Once cooked, remove the veal from the pan and cover to keep warm. Repeat the process with the remaining butter and veal.
  • Pour wine into the pan and simmer for 3 to 4 minutes until reduced by half. Add creme fraiche, cream, and mustard, then simmer for 2 to 3 minutes until slightly thickened. Stir in chives. Serve veal with pasta, sauce, tomatoes, and beans.
