Creamy mustard cheese baked haddock.
Ingredients:
  • 2 pounds haddock fillets
  • 0.125 teaspoon ground black pepper
  • 3 tablespoons butter
  • 0.25 cup minced onion
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground dry mustard
  • 0.5 teaspoon salt
  • 0.66666698455811 cup heavy cream
  • 0.66666698455811 cup half-and-half cream
  • 0.5 cup shredded sharp Cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • 0.25 teaspoon paprika
Instructions:
  • Preheat your oven to a toasty 350 degrees Fahrenheit (175 degrees Celsius) and gently butter a medium or large baking dish.
  • Pat the fillets dry and then generously season with 1 teaspoon of salt and a pinch of pepper.
  • Melt butter in a skillet over medium heat, saute onion until golden. Stir in flour until fully combined, then add mustard, 1/2 teaspoon salt, light and heavy creams. Cook until thickened while stirring constantly. Remove from heat, stir in cheeses, and pour the sauce over fish. Sprinkle with paprika.
  • Bake until golden and bubbling, about 30 minutes in a preheated oven.
