Haddock with Lemon Pepper Vegetables

Elegant fish dish that's healthy and easy to make, perfect for guests.
Ingredients:
  • 1 lb haddock, tilapia or other medium-firm fillets, 1/2 inch thick
  • 1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
  • 1 small red onion, cut lengthwise in half, then cut crosswise into thin slices
  • 2 teaspoons lemon-pepper seasoning
  • 1/2 teaspoon dried dill weed
  • 1 bag (1 lb) frozen baby peas, carrots, snow peas and baby cob corn (or other combination), thawed
  • 2 tablespoons cornstarch
  • Hot cooked fettuccine, if desired
Instructions:
  • Prepare the fish by cutting it into 4 serving pieces, then set aside.
  • Set aside 2 tablespoons of the broth. In a large nonstick skillet, combine the rest of the broth, onion, lemon-pepper seasoning, and dill weed. Bring to a boil, then lower the heat, cover, and simmer for about 3 minutes until the onion is tender.
  • Mix in the colorful vegetables, then nestle the fish into the flavorful mixture. Bring to a boil, then lower heat to medium. Cover and simmer for about 4 minutes, or until the fish is tender and flakes easily with a fork.
  • Gently transfer the fish from the skillet to a plate using a wide slotted spatula. In a small bowl, mix 2 tablespoons of reserved broth with cornstarch, then stir into the vegetables. Bring to a boil, stirring constantly, and let it boil and thicken for 1 minute. Serve the fish and vegetables over fettuccine.
