Prepare impressive honey butter crusted haddock with a buttery cracker coating.
Ingredients:
  • 0.75 cup butter, divided
  • 2 (4 ounce) packages buttery round crackers (such as Ritz®), crushed
  • 1.5 pounds haddock, patted dry
  • 0.5 cup honey
  • 1 teaspoon dried parsley
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Place 1/2 cup butter in a shallow microwave-safe bowl and microwave for about 30 seconds until melted. Stir in crushed crackers.
  • Place the haddock in a shallow baking dish and generously coat it with the buttery-cracker topping.
  • Cook the haddock in the preheated oven until the flesh is flaky when tested with a fork, for approximately 25 minutes.
  • Melt the remaining 1/4 cup of butter in a small microwave-safe bowl for about 15 seconds. Mix in honey and parsley until well combined.
  • Take the haddock out of the oven and generously drizzle it with honey butter. Return to the oven and bake for an additional 5 minutes, until the top is beautifully browned.
