Creamy salmon pasta with peas and spinach, ready in 35 minutes, perfect for a family weeknight meal.
Ingredients:
  • 50g butter
  • 1 small brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 20.00 ml plain flour
  • 515.00 gm milk
  • 510.00 gm chicken style liquid stock
  • 375.00 ml dried risoni pasta
  • 250.00 ml frozen peas
  • 40.00 gm basil pesto
  • 21.00 gm lemon juice
  • 415g can red salmon, drained, skin and bones removed, flaked
  • 60g baby spinach
  • 62.50 ml small fresh basil leaves
  • Finely grated lemon rind, to serve
Instructions:
  • In a large heavy casserole dish, melt butter over medium-high heat. Saute onion until softened, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in flour.
  • Pour in the milk and stock slowly, then bring to a gentle boil, stirring occasionally. Lower heat to medium and mix in the risoni. Cook for 10 minutes, stirring often until the risoni is tender. In the last 3 minutes of cooking, add the peas and continue stirring.
  • - Stir in the vibrant pesto and zesty lemon juice off the heat. - Finish with tender salmon, fresh baby spinach, fragrant basil, and tangy lemon rind. - Season generously with salt and pepper, then stir everything together. - Serve and enjoy your flavorful creation!
