Velvety polenta pairs perfectly with any protein or roasted vegetables for a delectable meal.
Ingredients:
  • 4 cups water
  • 1 1/2 teaspoons salt (or 1 teaspoon if using salted butter)
  • 1 cup yellow polenta or coarsely ground cornmeal
  • 2 tablespoons unsalted butter
  • 1/4 cup cream cheese
Instructions:
  • Gradually whisk polenta into boiling salted water: Bring a quart of water with 1 1/2 teaspoons of salt to a boil in a thick-bottomed 2 or 3 quart pan. While whisking, slowly pour in the polenta to avoid any lumps.
  • Gently simmer the polenta with butter on low heat, whisking until it thickens. Cover and cook for 25 minutes, stirring occasionally to prevent sticking. The polenta should be soft and tender; if not, cook a bit longer.
  • Incorporate the cream cheese: Blend the cream cheese into the polenta until smooth. Adjust seasoning as needed, adding extra salt if desired. For a richer texture, feel free to mix in additional cream cheese.
