Creamy polenta

Quick and elegant, creamy polenta is the perfect side dish.
Ingredients:
  • 750ml (3 cups) cold water
  • 170g (1 cup) coarse polenta (cornmeal)
  • 125ml (1/2 cup) thin cream
  • 20g (1/4 cup) finely grated parmesan
  • 40g butter
  • Salt
  • Finely ground white pepper
Instructions:
  • 1. In a large heavy-based saucepan, bring water to a boil over high heat. Stir the water using a wire balloon whisk. 2. Slowly pour the polenta in a thin steady stream into the boiling water, whisking continuously until fully incorporated (whisking helps distribute the polenta evenly). Be careful not to add the polenta too quickly to prevent lumps.
  • Lower the heat to a gentle simmer and stir the polenta continuously with a wooden spoon for about 10 minutes until it thickens and becomes soft. To check for doneness, place a small amount of polenta on a plate to cool slightly, then rub it between your fingers to test if the grains have softened. If they are still firm, keep cooking and stirring over low heat until the polenta reaches the desired softness.
  • Take off the heat and mix in the cream, parmesan, and butter until fully incorporated. Season with salt and pepper to taste. Serve right away.
