Elegant prawn sandwiches, ideal for high tea or special gatherings like christenings.
Ingredients:
  • 750g tiger prawns, peeled, deveined, finely chopped
  • 60ml cooking cream
  • 42.00 gm lemon juice
  • 20.00 ml finely chopped dill
  • 20 slices fresh white bread
  • Cooking cream, extra
  • 2 bunches chives, finely chopped
Instructions:
  • In a large bowl, mix together the prawns, cooking cream, lemon juice, and dill. Season with salt and pepper to taste.
  • Lay out half of the bread slices on a clean work surface. Divide the prawn mixture evenly among the slices. Top with the remaining bread slices. Trim the crusts off each sandwich using a large serrated knife. Cut each sandwich into thirds lengthwise.
  • Lay out the chives on a plate. Spread a touch more cooking cream on one long side of a finger sandwich. Gently press the cream side of the sandwich into the chives. Transfer to a serving platter. Repeat with the rest of the sandwiches. Serve promptly.
