Prawn crostini

Delicious crostinis with creamy cheese, succulent prawns, and a fresh dill garnish for an elegant touch.
Ingredients:
  • 125g spreadable cream cheese
  • 1/2 French stick
  • Olive oil spray
  • 1 thin-skinned lemon, scrubbed
  • 18 dill sprigs
  • 18 medium vannamei prawns, peeled
Instructions:
  • Preheat the oven to 180C (160C fan). Slice the French stick into 18 thin (1cm) slices, discarding the ends. Spray one side with oil, then place oil side down on an oven tray. Spray the top sides with oil. Bake for 15 minutes until crispy and golden, flipping once. Cool and store in an airtight container.
  • Thinly slice the lemon into 5 rounds, then cut each round into quarters. Set aside the lemon quarters. Juice the lemon and mix the juice with the cream cheese, then season to your preference.
  • Top each crostini with a layer of cream cheese mixture. Remove prawn tails and arrange them on top. Garnish with lemon slice and dill sprig.
