Ginger prawn crostini

Elevate your next gathering with grilled ginger prawn bruschetta topped with fresh veggies and herbs.
Ingredients:
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 60ml olive oil
  • 24 green tiger prawns, peeled leaving tails intact, deveined
  • 300g Rustic Baguette, ends trimmed, cut into 12 slices
  • 2 Lebanese cucumbers, cut into ribbons
  • 125.00 ml drained roasted red capsicum strips
  • 21.00 gm lemon juice
  • 20.00 ml chives, finely chopped
Instructions:
  • In a small bowl, mix together the ginger and oil, then season with your favorite spices. Toss the prawns in half of the ginger mixture in another bowl.
  • Preheat a barbecue grill or chargrill on high heat. Grill the bread for 2 minutes on each side until nicely charred. Then, transfer the bread to a serving platter.
  • Grill the prawn mixture on the barbecue for 2 minutes per side or until cooked through.
  • Evenly layer cucumber, capsicum, and prawns on the bread slices. Mix the leftover ginger mixture with lemon juice and chives in a small bowl. Drizzle the prawn crostini with the ginger mixture. Serve right away.
