Quick and tasty fried rice recipe!
Ingredients:
  • 5cm piece ginger, peeled
  • 3 garlic cloves, peeled
  • 1 small red chilli
  • 2.40 gm salt
  • 54.60 gm peanut oil
  • 2 eggs, lightly beaten
  • 1 red capsicum, deseeded, cut into 1cm dice
  • 227g can water chestnuts, sliced
  • 125g baby corn, sliced into rounds
  • 300g peeled green prawns
  • 600.00 gm cooked, cold jasmine rice (you will need 600.00 gm uncooked rice)
  • 20.80 gm tomato sauce
  • 36.60 gm oyster sauce
  • 3 shallots, sliced finely diagonally
Instructions:
  • Create a flavorful paste by combining the ginger, garlic, chili, and salt in a mortar and pestle.
  • In a hot wok, swirl 1 tablespoon of peanut oil. Add the egg, swirl to create a thin omelette, and cook for 1 minute. Transfer to a cutting board, roll, and slice into thin strips.
  • In a hot wok, heat the rest of the peanut oil, then stir in the paste and cook for 1 minute. Add capsicum, water chestnuts, corn, and prawns. Stir-fry for 3 minutes until prawns are nearly cooked.
  • Introduce the rice into the pan and sauté for 2 minutes, ensuring the spices coat the grains evenly. Mix in the tomato sauce and oyster sauce. Present the dish with egg strips and sliced shallots on top.
